Ingredients

  • 200 gramm quinoa
  • 1 piece onion
  • 1 clove garlic
  • 500 gramm champions
  • 1 piece broccoli
  • 3-4 pieces carrots
  • 1/2 tsp salt
  • 1 tsp veggie soup seasoning
  • 2 tbsp olive oil
  • pepper

Instructions

  • After rinsing the quinoa, cook the grains in 400 ml of boiling water or better in a vegetable broth for 7-10 minutes. Take the pot off the stove and let it swell for about 15 minutes.
  • The quinoa should be "al dente" for the salad. Cooked too long, the seeds lose their bite and taste.
  • Chop an onion and a clove of garlic and fry.
  • Cut the champions, a broccoli and 3-4 carrots or kohlrabi into small pieces, mix together and fry (broccoli and carrots can also be pre-cooked in the vegetable broth).
  • Add olive oil, salt and pepper and enjoy.
