- 200 gramm quinoa
- 1 piece onion
- 1 clove garlic
- 500 gramm champions
- 1 piece broccoli
- 3-4 pieces carrots
- 1/2 tsp salt
- 1 tsp veggie soup seasoning
- 2 tbsp olive oil
- pepper
After rinsing the quinoa, cook the grains in 400 ml of boiling water or better in a vegetable broth for 7-10 minutes. Take the pot off the stove and let it swell for about 15 minutes.
The quinoa should be "al dente" for the salad. Cooked too long, the seeds lose their bite and taste.
Chop an onion and a clove of garlic and fry.
Cut the champions, a broccoli and 3-4 carrots or kohlrabi into small pieces, mix together and fry (broccoli and carrots can also be pre-cooked in the vegetable broth).
Add olive oil, salt and pepper and enjoy.
