Fried Fennel and Tomatoes

Normally we all don´t like fennel - but this recipe tastes really good.

Ingredients

For the lye bun

  • 4 pieces fennel bulbs
  • 12 pieces cherry tomatoes
  • 1 tbsp tomato paste
  • 100 ml white wine
  • 1 clove garlic
  • 4 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper 
  • 1/4 tsp cumin
  • 1/2 soup cubes or similar spice mix
  • coriander, cinnamon, ginger

Instructions

  • Clean the fennel and cut it into slices about 1 cm wide. Roughly chop fennel green.
  • Halve tomatoesand cut the garlic into thin slices.
  • Heat 2 tablespoons of olive oil in a pan. Add the fennel and garlic and fry.
  • Add the greens, water and white wine with salt, pepper and the other spices. A
  • dd tomatoes and tomato paste and simmer for 15 minutes while stirring.
  • Drizzle with the remaining olive oil and serve.
